So here I am backed up with draft posts but I know I just have to push this one through.  We have a small family business called Cake Garden here in Tagbilaran City, Bohol.  It's a delicious mix of cakes, pastries and good food - more than the usual.  Sounds like DOT's previous campaign.  Anyway, we had been pounded with tons of orders during the holidays from family and friends.  Now that hype slowed down a bit and we got a wee bit of time to improve our products and the Cake Garden Blog.

The new sticky buns are bigger, gooey-y, buttery, caramel-y and imbued with more cinnamon.  Last year, we included these babies in our price list but we did not really market them for the reason we're still experimenting on the different types of dough to be used.  We even tried using Brioche dough in one occasion.  For the final product, we'll be using sweet dough for your sticky bun cravings.

Here's another very simple bar recipe that also predates college days together with Brownies.  Butternut Chewies is much more simpler yet the taste is so exquisite that you think it requires supercalifragilisticexpialidocious baking power!

Butternut Chewies

You're going to need:

  • 2 eggs
  • 2 cups brown sugar
  • 1 tsp. vanilla
  • 1/2 cup margarine, melted
  • 1 1/2 c all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup cashew nuts, finely chopped

Yep, that's it!  Now some very simple directions.

  • Preheat oven to 350 F.
  • Grease a 13"x9"x2" rectangular pan.  Set aside.
  • Combine flour with baking powder and salt.  Set aside.
  • Beat eggs until light and foamy.
  • Beat in sugar, vanilla and margarine until creamy.
  • Add flour mixture to egg mixture.  Mix until well-blended. (Fold!)
  • Stir in nuts.
  • Spread evenly in the prepared pan.
  • Bake for 25 to 30 minutes or until top is light brown.
  • Cool then cut into squares.

That simple?  Yes simple as that!  Oh yeah?  Yeah oh yeah!  Here's some shots lest ye stray away from the directions.

Way back in college I sell brownies to friends, classmates and teachers even as a source of extra income at mom's expense.  Sometimes I work so late up night just to finish three layers of these brown goodies and completely forgot I still have my nursing care plan to do.  She provided all the ingredients but every time I make a sale, I constantly forgot to give her back her share.  Sorry mom but I am still thankful for teaching me your recipes on at a time.  Fudge Brownies is a simple recipe and thus today tonight I'll share this simple yet good-for-starters recipe.

Pan-Fried Scallop & Roasted Sweet Bell Pepper Salad
with Fresh Grapefruit Dressing
I found this presentation from my mom back when she was still studying at ISCHAM almost a couple of years back.  I'm not a food blogger but I can blog about food because I love food!

I decided to post more of these soon so you can also try this at home.  It looks simple, but let me know in the comments after you have actually tried it.

My mom is food genius, every time go back home to Bohol, let's just say expect some weight gain.  Even my dad who is a constant runner can easily gain kilos every time he goes back.  We're happy that she's already started Cake Garden and we're 1000% (that's an extra 0) full support.

Pan-Fried Scallop & Roasted Sweet Bell Pepper Salad 
with Fresh Grapefruit Dressing

Ingredients

For The Salad

  • Sea Scallops (fresh) 0.750 kg
  • Onion (red) 0.150 kg
  • Iceberg Lettuce (fresh) 0.250 kg
  • Grapefruit (fresh) 4 pcs
  • Bell Pepper (red) 0.800 kg
  • Bell Pepper (yellow) 0.800 kg

For The Grapefruit Dressing

  • White Wine Vinegar 0.060 Lt
  • Grapefruit Juice (fresh) 0.120 Lt
  • Grapefruit Zest
  • Onion (red, fresh) 0.70 Kg
  • Sunflower Oil 0.120 Kg
  • Pepper (white, ground) 1 pc
  • Salt (iodized)
